To create this special edition it was blended with a portion of the 2021 release that had been aged in a Heaven Hill Bourbon barrel with the 2023 release to give it subtle notes of bourbon.
“HEF-uh-VYT-zen” is the traditional cloudy wheat beer of Bavaria. “Hefe” means yeast and “weizen” means wheat in German. With at least 50% wheat malt, it has a very different flavour to barley based beers. But it’s the unique yeast that gives it a cloudy appearance and unusual flavours of banana, bubblegum, clove and coriander. The yeast is top-fermenting at ale (warm) temperatures but the results must be lagered (cold conditioned) for best results. Hefeweizens normally have low bitterness, high carbonation and taste great in the Summer with a slice of lemon.

This Zwickl is the unfiltered brew of our light beer with its typical yeast and protein turbidity. In the smell you can clearly feel the slightly fruity notes that emanate from the remaining yeast. Opal cloudy, mild and aromatic with malt, it is our master brewer's favorite beer. Wildbräu Zwickl still contains all the clouding ingredients that give the beer a very soft, creamy, spicy taste. After four weeks of maturing, it is bottled unfiltered.
Our MEISTERSUD presents itself as a bottom-fermented beer with a malty-spicy taste.
In the glass it shows itself in a light gold tone with sunny reflections, crowned by a white, fine foam with good adhesion. It smells of hay, biscuit and something herbal and fruity. The initial taste is soft with very finely integrated carbon dioxide, which rises creamy in the mouth. Malt body and hop bitterness are perfectly balanced in the overall character. The finish is subtle and hoppy.

Founded in the 1840's, Jever typifies the very dry style of pilsener from Friesland in the north-west corner of Germany and this remarkable beer is lagered for an impressive 90 days. Although only a small brewery, the 'Friesische Brauhaus zu Jever' has become a top brewery in Germany producing this extra dry pilsener. It's also one of the most bitter, hoppy lagers in the Germany, as indicated by 'herb' on the label. Because the Friesland water is very soft, Jever can add more hops when brewing to create the rather different taste.

The IGA (Italian Grape Ale) is made with 10% Centesimino grapes from the natural winemaker Ancarani. The must was subjected to a spontaneous fermentation environment coming from the grapes, along with the inoculation of brettanomyces. The beer was refided for 6/7 months in barrels with the skins in undergoing maceration.
This beer is a collaboration between Freigeist Bierkultur (Germany) and Brekeriet Beer AB (Sweden). It consists of a blend of different beers, with 50% being fermented with Brettanomyces Bruxellensis and aged in open vats for 5 months. Another 25% is a spontaneously fermented beer aged for 15 months in bourbon barrels from Brekeriet. The remaining 25% comes from a 100% smoked malt beer, spontaneous fermentation and one year in barrel (Freigeist).

“Birra cotta” (cooked beer) inspired by cooked wine and produced with the same technique. The six hours of boiling, caramelizing the wort, give it a dark red color despite the use of only pale malts.

In this version, elderflower and acacia flowers have been used, harnessing the microflora present on the petals. With a golden straw color, it is a dry and refreshing beer, very fragrant. Ferments and ages for 12 months in oak barrels with our indigenous yeasts. At the end of maturation, we add directly into the barrels our Garganega, Tai Bianco and Incrocio Manzoni grapes that we grow on the Berici Hills. The maturation in barrel together with the grapes continues for another 3 months.
White IPA flavored with bitter orange peel and coriander. Pale yellow in color, it is fragrant and has a citrus flavour. Thirst-quenching and drinkable thanks to the low alcohol content, the bitterness and the freshness given by the wheat and spices.
Fermented India Pale lager with bottom-fermented yeast, which gives great character and extreme ease of drinking. The aromatic notes of exotic fruit given by the abundant cold hopping prevail on the nose, in the mouth the slightly malty body leaves a dry finish in which the tropical and balsamic notes of the hops emerge easily.
An Amercian IPA. The nose is immediately stimulated by the fragrances of hops, with a very evident citrus character, tinged with pink grapefruit and vanilla orange, which is accompanied by a subtle tropical vein with reminiscences of pineapple and papaya.

With Whale Shark we explore the creamy depths of the New England Double IPA. The quest is to make our silkiest and juiciest example yet. Grumpy Old Man is The Guild Brewing Company's house Brown Ale. The name is a reference to some of our "senior"" management that complained regularly that there was not a brown ale on our tap list. Super Fruity Session Cider. Using apples that have been rejected by supermarkets, the varieties that combine to create Pilot change too. The sugars and acids in each apple are dependent upon their variety, their terroir and the conditions that they were grown in. Due to this, the flavours in Pilot change too, but we don’t see this as a negative. We see it as a reflection of the apple and its history.

A cockle stout brewed with Leigh-on-Sea cockles in the boil (obviously a departure from the usual vegan policy!) and is a take on an Oyster Stout. It is jet black in appearance with a bright white fluffy head, and aromas of chocolate and roasted malt. The flavours are of chocolate, coffee, caramel, with a lightly roasted finish. The cockles are added towards the end of the boil, joining Magnum and Golding hops. Renown was one of the six cockle boats from Leigh-on-Sea involved in the Dunkirk troop rescue. Renown was an Osborne Bros boat and was tragically lost on the return journey, being struck by a mine with the loss of four lives. The story is kept alive with this distinctive beer and it is considered highly appropriate that the cockles used come from the current day Osborne Bros business.

Brewed with pale malts and used peachy Australian Galaxy hops to add a fruity twist to our delicious lager. It is then lagered, or cold conditioned, to give a full, well-rounded flavour and that dry, refreshing bite. Galaxy hops are descended from the excellent German allrounder, Perle, and are known for their amazing peach, and passionfruit aromas, especially when used as a late addition.
Ease Up is a golden session IPA with wonderful citrus flavours thanks to a stellar cast of bright, aromatic hops. Following calls to add a gluten free beer to the Adnams range, they tweaked the process when brewing it, making its big-hitting more accessible. It still has that same great grapefruit flavour, but it’s now also gluten free.
